The emphasis at Cuisine de Cal is on the use of fresh, local ingredients that are often acquired daily from local farms and farmers markets. Menus are updated regularly to accommodate the availability of ingredients in season. Custom menus can be prepared per customer request.

Honey Barbeque Sauce

Tony Roma\'s is our place for ribs. My wife always orders the \"Carolina Honey\'s.\" This sauce was inspired by \"Tony Roma\'s\" \"Carolina Honey Sauce.\" The flavor is sweet, tangy, and smoky. Honey BBQ sauce works well on BBQ beef and pork ribs as well as chicken.


 


Crostini with Sun dried Tomato and Prosciutto Compote
This is one of my most popular appetizers. We are catering a wedding this month for an old friend and this was top of her list!
 


Gnocchi

Gnocchi is one of those old-time favorite Italian comfort foods. We\'ve added a bit of a twist with our recipe -- kicking it up a bit by adding a bit of nutmeg and Parmigiano-Reggiano

This recipe serves well with our Gorgonzola Cream Sauce 


 


Margarita Ceviché with Ahi Tuna and Shrimp
Ceviché is of the most delicate and sophisticated South of the Border seafood treats. This dish can be served as a classy appetizer or as an accompaniment to your SOB main course.
 


Bulgogi - Korean BBQ Beef

Any one who is familiar with Korean food knows Kimchee and Bulgoge. Bulgoge is traditional Korean BBQ beef. In many Korean restaurants this dish is cooked at the table by the patrons. This dish is often slightly sweet and sometimes spicy.


 


Cal Carnitas Tacos
Carnitas is a South of the Border favorite. This crispy, citrus tinged delight is sure to wow your guests!
 


Beef Stock
This is a full-bodied beef stock. Roasting the beef bones, trimmings and vegetables makes for a richer, deeper flavored stock.

This is a rich, creamy sauce that I use for both gnocchi and pasta

This Guacamole is a bright flavored and colorful addition to any South of the Border Soirée!
 


Cranberry Sorbet

Cranberry sorbet is just a bit sweet and a little on the tart side. It\'s delicious on its own but also goes well with tropical fruit. For a special surprise try serving this dessert at your Christmas celebration. Keep one in the freezer ready for entertaining.


 


Goat Cheese, figs and Herb Stuffed Radicchio
This appetizer is bright in both flavor and color. The contrasting red and green colors make this a perfect addition to any table, but specially fitting for a Christmas themed event.
